Watermelon vodka cooler

Serves 6

Ingredients
500g seedless watermelon
Juice of four limes
2 cups vodka
Dry sparkling wine, to top off

Method
1. Chop the watermelon into small pieces and blend in a food processor until smooth. Place the pulp in a sieve over a jug and leave in the fridge for one to two hours until all the liquid has drained.
2. Stir in lime juice and vodka.
3. Pour about 200 ml of the cocktail into each glass and top off with sparkling wine.

Sparkling wine with strawberries

Serves 6

Ingredients
300g strawberries, halved
1 cup rum
50g caster sugar
1 bottle dry sparkling wine

Method
1. Place the strawberries, rum and caster sugar in a bowl and toss gently. Leave in the fridge for 20 minutes to infuse and become syrupy.
2. Scoop the berries into a Champagne flute and top off with sparkling wine.

Rosé sangria

Serves 6

Ingredients
2 cups dry rosé
200 ml Martini Bianco
200 ml dry lemon
50g brown sugar
2 cinnamon sticks, plus extra to garnish
Dry sparkling wine, to top off
3 plums, finely sliced, to garnish

Method
1. Mix the rosé, Martini Bianco, dry lemon, sugar and two cinnamon sticks together. Stir until the sugar dissolves. Leave the mixture in the fridge overnight to infuse.
2. Pour the mixture into six stemmed glasses and top off with sparkling wine.
3. Garnish with plum slices and a cinnamon stick.
