Coffee and Amarula ice lollies

Makes 10

Ingredients
1  vanilla ice cream, softened
cup strong filter coffee, cooled
cup Amarula

Method
1. Fill each ice-lolly mould  with the softened ice cream. Mix the coffee with 1 cup ice cream and add 1 tbsp
of the mixture to the ice lollies. Flatten and place
in the freezer.
2. Mix the Amarula with the remaining ice cream and fill each ice-lolly mould to the top. Place an ice-lolly stick in each mould and freeze for four hours until solid.

Champagne and berry ice lollies

Makes 10

Ingredients
1  cups rosé Champagne
10 strawberries, stems removed and halved
cup pomegranate rubies
20 rose petals, dried or fresh

Method
1. Fill ice-lolly moulds about halfway with the Champagne, then add the fruit and rose petals until each mould is filled to the brim.
2. Place an ice-lolly stick in each mould and freeze for four hours until solid.

Jalapeño-mango margarita ice lollies

Makes 10

Ingredients
cup tequila
1 jalapeño, sliced
4 cups mango, diced
cup lime juice (± limes)
cup sugar

Method
1. Combine the tequila and jalapeño in a jar. Cover and allow to infuse for six hours.
2. Blitz all the ingredients together in a blender. Pass the mixture through a sieve, then pour into ice-lolly moulds. Place an ice-lolly stick in each mould and freeze for four hours until solid.
