These fresh, fruity cubes will add a little extra flavour to any drink

Green tea and apple

Makes 12

1 green tea bag
500 ml boiling water
1 green apple, sliced into thin semicircles

1. Make the tea by dipping the bag in the hot water a few times. Allow to cool.
2. Layer the sliced apple in an ice-cube tray.
3. Pour the tea over the sliced apple and freeze.

Coconut milk and raspberry

Makes 12

150g raspberries
430 ml tin coconut milk

1. Use a fork to gently crush the raspberries, but be careful not to purée them.
2. Scatter in an ice-cube tray, cover with the coconut milk and freeze.

Pineapple and coriander

Makes 12

1 pineapple, peeled and cut into chunks
10 sprigs coriander
10 ml coriander, finely chopped

1. Place about two thirds of the pineapple in a blender, blend until smooth
and then pass through a sieve. Pour into an ice-cube tray.
2. Cut the rest of the pineapple into small cubes and add to the tray.
3. Scatter the coriander sprigs and finely chopped coriander, then freeze.

Ginger beer and Pimms

Makes 12

150 ml ginger beer
200 ml water
100 ml Pimms

1. Mix the ginger beer and half of the water together and pour into an ice-cube tray,
half-filling each indentation.
2. Freeze for two to three hours, until just set.
3. Mix the Pimms and the rest of the water together and pour over the ginger beer layer,
then freeze again.
